Twenty something


I turned 25 today. Wow, twenty freaking five!

I have had a beautiful day filled with sunshine, flowers, kisses, cuddles, cake and love.

Call me Martha..


Yesterday was a day of domestic indulgence. Also known as crazy woman NESTING syndrome.

I had a sudden burst of energy so I...

: Cleaned the bathroom (when it did not need to be cleaned)
: Cleaned out the fridge
: Vacuumed my car
: Moved large items of furniture up and down the hallway
: Cleaned out all of skinny clothes and packed them away, temporarily...
: Folded three loads of laundry and packed it away
: Made dinner see below
: Made chocolate cupcakes...go figure!

And last but not least..

: Kept Igglepiggle entertained all day!

For me this is a lot. I must admit, this pregnancy has brought out my lazy side. A normal day would consist of eating, napping, and entertaining Igglepiggle, oh and cooking dinner.

This was the delicious dinner I made last night.

CHICKEN HERB MEATBALLS

1kg of free range chicken mince
5 cloves of crushed garlic
Large handful of chopped continental parsley
Large handful of chopped basil
1 tablespoon of chopped fresh oregano
Heaps of grated Parmesan
About a cup of fresh breadcrumbs
3 eggs, lightly beaten
A little bit of Massel chicken stock powder
Heaps of cracked pepper

SAUCE

2 diced onions
3 tins of diced tomatoes
1 cup of white wine
1/2 cup of tomato paste
1L of chicken stock
Fresh Basil


Brown the meatballs slightly, a few minutes each side. Pop them into the sauce and let it simmer for and hour.

Serve with fresh pappardelle, Parmesan and a sprinkle of parsley.

YUM!

Let's hope the domestic indulgence continues well into the future.
